Simple Lamb Tagine
This recipe will put a smile on the face of the whole family, particularly the children as whilst lightly spiced, it also has sweetness to the dish. It freezes really easily as well, so make up a big batch so that you have plenty in the freezer for those last-minute meals. A perfect dish for our food pots for lunch or for supper. Whilst this recipe is for 2 people, it is easily scaled up to more portions.

Chipotle chicken is a Mexican-orientated dish, which can be served slightly dry. In this instance, we have made the recipe saucier and creamier! Much better if you want to have a spicier dish that is juicy and that will not dry out – keeps you a little more hydrated!

Celery can be a much-maligned vegetable, when it really shouldn’t be. It has a high-water content and is pretty low in calories, fat and carbohydrates. It is a great lunchtime meal, and don’t be worried about cheating with a nice piece of crusty bread!

Get Well Chicken Noodle Soup
A good chicken soup was always thought to help towards making you better if you had colds, coughs, flu or other types of winter illnesses. This one is no different, but probably much tastier than really old recipes from years ago. It can be made with leftover chicken from a roast dinner, or by using a whole fresh chicken breast, which we have done. High in protein and a great winter warmer!
Spicy Carrot and Lentil Soup
This is a deliciously creamy soup, with just the right amount of spices to rev it up a bit but not to overwhelm the soup. Use split lentils for ease of cooking.
Caribbean Sweet Potato Soup
Sweet potatoes (or yams) are widely used in the Caribbean and make delicious soups and stews. Inhabitants of the islands also use peanut butter to sweeten savoury dishes, and chilli to give it a bit of fire! We have used chilli powder for those with a gentler palate, but by all means use a fresh chilli (half) depending how much you love heat!
Mock’ Minestrone Soup
We call this ‘mock’, purely because there are so many variations of this hearty soup from the different regions of Italy, that we have chosen ingredients that are easy to obtain in supermarkets and give the Italian flavour throughout the dish. A great recipe for vegetarians as well.
Creamy Wild Mushroom Soup
If you are going to really enjoy mushrooms soup, please use wild mushrooms and dried ceps or porcini – there is so much more flavour than the forced button mushrooms on sale these days.
